Recipe: Coconut Claus Clusters

Ingredients:

  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract (optional but recommended)
  • 1 ½ cups shredded sweetened coconut
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup white chocolate chips
  • Sparkling sugar or edible glitter for garnish

Instructions:

  1. Preheat & Prep: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, combine melted butter, sugar, egg, vanilla, and peppermint extract. Whisk until smooth.
  3. Add the Dry: Stir in flour, baking powder, and salt until just combined. Fold in shredded coconut and white chocolate chips.
  4. Scoop & Shape: Using a cookie scoop, drop dough balls onto prepared baking sheet. Flatten gently with the back of a spoon.
